The Ridgway Area Chamber of Commerce is excited to announce Lazy Dog Saloon as our December 2025 Member of the Month! The Member of the Month program is an ongoing effort by the Chamber to provide residents and visitors information about businesses and organizations in the area and promote the patronage of our local resources and our small, independent companies. RACC recently sat down with owners Robert Collins and Vicki Pruitt to talk about how their southern roots and putting twists on old family favorites inspired them to open a restaurant right here in Ridgway!

Q: Please introduce yourselves and which Ridgway business establishment do you own?

A: Our names are Robert Collins & Vicki Pruitt and we own Lazy Dog Saloon. 

Q: What was the inspiration behind opening Lazy Dog Saloon?

A: We wanted to share our love of food and community with Ridgway. Our menu is a reflection of our Southern roots and family recipes that we want to share with Colorado. Family, Food, and Ridgway is what we are about!

Q: How long have you been serving Ridgway?

A: We turned 4 in October! We are so blessed to have a great local crowd and an amazing staff. Shout outs to Shawn, Tiffany, Carley, Karim, Patrick, Autumn, Yaz, and Dickie!

Q: What’s the creative process behind choosing a Dog of the Week?

A: I (Robert) was a sports kid growing up, and probably consumed more hotdogs than I’d like to admit and we both have a love for fusion foods. The dog is our way of having a rotating fusion food on the menu. I mean Lazy Dog of the week, it kind of wrote itself. 

The creative process is a combo of a few things. First, I’d say nostalgia, putting twists on dishes that have been made with my grandmothers and Uncle James when I was younger, added with things done over the 26 years I have spent in kitchens. Then we have to make sure we balance flavors, textures, and colors. Finally, my favorite part, the sampling. Then we make any adjustments as needed. We have some traditional dogs like the chili cheese or the Chicago dog. Then we have some super unique dogs like the elotè dog, the poutine dog, and our favorite, the gator dog. 

Q: What is the one item on your menu that you think everyone must try?

A: It’s tough to choose, but it’s a tie between our lamb gyro and a fried chicken pepper jelly sandwich.
